SKILLET RANCH BURGER


Lean ground turkey keeps these burgers light, while jalapenos and ranch dressing mix add great flavor 
  • 4 Servings
  • Prep/Total Time: 30 min.

  • 1/2 cup soft bread crumbs *use crushed pork rinds and lower the cab values. adjust nutritional values accordingly.
  • 1 small onion, finely chopped
  • 1 small green pepper, finely chopped
  • 2 jalapeno peppers, seeded and finely chopped
  • 1/4 cup egg substitute
  • 1-1/4 teaspoons ranch salad dressing mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon hot pepper sauce
  • 1 pound lean ground turkey
  • 4 whole wheat hamburger buns, split
  • 4 lettuce leaves
  • 4 slices tomato
  • 4 slices onion

  • SAUCE:
  • 1/2 cup fat-free sour cream
  • 1 teaspoon ranch salad dressing mix

Directions

  • In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into four patties.
  • In a large nonstick skillet coated with cooking spray, cook patties over medium heat for 6-8 minutes on each side or until a meat thermometer reads 165° and juices run clear.
  • Serve on buns with lettuce, tomato and onion. Combine sour cream and dressing mix; spoon over burgers. Yield: 4 servings.

Editor's Note: We recommend wearing disposable gloves when cutting hot peppers. Avoid touching your face.

MEDITERRANEAN BURGER

Mediterranean Burger



Grilled burgers topped with spinach and red onion.

Prep Time: 5 minutes
Cook Time: 20 minutes
Difficulty: EASY

Ingredients

Directions 1 In medium mixing bowl, blend meat, roasted red pepper, and oregano with a fork.
2 Form into 4 patties.
3 Coat skillet or grill with cooking spray. Heat to medium. Cook burgers over medium-high, flipping burgers once, until juices run clear.
4 Add salt and pepper to taste. Top with red onion and spinach.

THAI TURKEY BURGER

Thai Turkey Burgers


Prep Time: 20 mins
Cook Time: 14 mins
Total Time: 34 mins

Ingredients

  • 1/4 cup(s) refrigerated or frozen egg product, thawed, or 1 egg, beaten
  • 1/4 cup(s) bread crumbs, fine, dry*you could use crushed pork rinds here, for more protein, less carbs, adjust nutritional values accordingly
  • 1 teaspoon Thai seasoning
  • 1 pounds turkey, ground
  • 6 hamburger buns, whole-grain (cocktail-size)
  • 3/4 cup(s) basil, fresh
  • 2 tablespoon peanut dipping sauce
  • 1 medium mango(es), pitted, peeled and sliced

Preparation

1. In a medium bowl, combine egg product or egg, bread crumbs, and Thai seasoning or curry powder. Add ground turkey breast; mix well. Shape into six 3/4-inch-thick patties.

2. Place patties on the greased rack of an uncovered grill directly over medium goals. Grill for 14 to 18 minutes or until done (165°F),* turning once.

3. To serve burgers, top bottom half of each bun with some of the basil. Add patties. Spoon peanut dipping sauce over patties; add mango slices and bun tops.

TURKEY BURGER W/ HERB SAUCE


Turkey Burgers with Herb Sauce


A tangy sour cream sauce complements these moist ground turkey burgers stuffed with feta cheese.

Ingredients

  • 1/4 cup finely chopped red onion
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon plus 1/3 cup sour cream, divided
  • 1/2 pound lean ground turkey
  • 1 tablespoon crumbled feta cheese
  • 1-1/2 teaspoons minced chives
  • 1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
  • 1-1/2 teaspoons lemon juice
  • 3/4 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 lettuce leaves
  • 2 sesame seed hamburger buns, split

Directions

  • In a small bowl, combine the onion, parsley and 1 tablespoon sour cream. Crumble turkey over mixture and mix well. Shape into four thin patties. Top two patties with feta cheese; top with remaining patties and press edges firmly to seal.
  • Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until a meat thermometer reads 165°.
  • In a small bowl, combine the chives, basil, lemon juice, tarragon, salt, pepper and remaining sour cream. Serve burgers on lettuce-lined buns with herb sauce. Yield: 2 servings.

This is a lighter version of a tasty burger that people enjoyed at a place I once worked. substituted the beef with turkey and use low-fat cheese, the results are tastier than the original crowd-pleaser.

Ingredients

  • 3 slices whole wheat bread, torn
  • 1 cup fat-free milk, divided
  • 6 garlic cloves, minced
  • 1-1/2 teaspoons ground mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 pounds lean ground turkey
  • 1-1/4 teaspoons all-purpose flour
  • 3/4 cup shredded reduced-fat cheddar cheese
  • 1 jalapeno pepper, seeded and chopped
  • 6 whole wheat hamburger buns, split
  • 6 lettuce leaves
  • 6 slices tomato

Directions

  • In a large bowl, soak bread in 1/2 cup milk for 1 minute. Add the garlic, mustard, salt and pepper. Crumble turkey over mixture and mix well. Shape into six patties; set aside.
  • In a small saucepan, combine flour and remaining milk until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add cheese and jalapeno; stir until cheese is melted. Keep warm.
  • Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill patties, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a meat thermometer reads 165° and juices run clear.
  • Serve on buns with lettuce, tomato and jalapeno cheese sauce. Yield: 6 servings.

CHEESE BURGER PIE -*K*I*S*S* (KEEP IT SIMPLE SUPPER)

Cheeseburger Pie - KISS (Keep it Simple Supper)

 
It’s Cheeseburger Pie time. Kiss - Keep It Simple Supper! We simplified one of the most requested recipes from our cooking forum as it just had too many ingredients. Michelle Rojo, our resident 'basic cook' printed the old version a dozen times only to make meatloaf instead. This supper can be in the oven in ten minutes and yes, IT REALLY DOES TASTE LIKE A CHEESEBURGER!

1 1/4 pounds ground sirloin
1 medium onion, diced
Salt and freshly ground black pepper
1/4 cup ketchup, regular or sugar free if you have it (we love Natures Hollow SF Ketchup)
1 cup shredded Cheddar cheese (4 ounces)
1/2 cup original Bisquick baking mix ( I pick up a five ounce envelope from the pancake section)
1 cup milk
2 eggs

Burger toppings
Preheat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.

Cook the ground beef and onion over medium high heat for 8 to 10 minutes, stirring occasionally, 6 to 8 minutes, until beef is brown and onions are tender; drain well. (I even use my kitchen tongs to sop up any fat with a paper towel!) Fold in ketchup, season with salt and pepper and spoon into prepared pie plate.

Combine Bisquick, milk, and eggs in a small bowl until blended, fold in cheese. Pour over meat mixture in pie plate. Bake for 25 to 30 minutes, until knife inserted in center comes out clean.

Place wedges onto serving dishes, top with a squirt of ketchup, a squeeze of mustard, and a few pickle chips.

*TIP* - USE GROUND TURKEY (make sure you SEASON accordingly for flavor, add adjustments when done) FOR LOWER FAT CONTENT!  adjust nutritional values accordingly.

GREEK TURKY BURGER

Greek Turkey Burger

You'll forget all about beef burgers once you try these. Serve with half a pita pocket, sliced tomato, and mixed greens for a quick and tasty dinner. Salty and rich feta is mixed with lean ground turkey and Greek herbs for a juicy and delicious burgers.
INGREDIENTS
1 lb. 93% lean ground turkey
1/4 c bread crumbs, plain
1/2 c feta cheese, crumbled
1 egg white
1 T mint, fresh, chopped
1 t oregano, dried
1/4 t black pepper
Cooking spray
DIRECTIONS
Mix all ingredients until just combined. Overworking the mixture can result in tough burgers. Heat a non-stick skillet to medium low heat. Divide the meat mixture into 4 round balls. Flatten the burgers with your hand and press your thumb in the center of each burger to keep the meat from rising too high as it cooks. Spray skillet. Cook the burgers about 5-6 minutes per side, flipping only once, until internal temperature reaches 165 degrees.
