STEAMED CABBAGE

Steamed Cabbage

Cooking time: 10 min

Ingredients:

1 tsp unsalted butter, melted
1-1/4 lb cabbage, cut into wedges

Cooking Directions:

Place cabbage in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until cabbage is bright green and tender. Do not overcook. Remove cabbage from steamer. Drizzle with melted butter. Season with salt and pepper to taste.

Parsleyed Green Beans

Cooking time: 10 min

Ingredients:

1 tbsp parsley, minced
1-1/2 lb green beans, trimmed
1 tbsp virgin olive oil

Cooking Directions:

Place green beans in a steamer basket over boiling water. Cover saucepan and steam 7-8 minutes or until tender. Remove beans from pan. Rinse under cold running water. Transfer to a bowl and add oil, parsley and salt and pepper to taste. Toss and serve.

AVGOLEMONO SOUP W/CHICKEN & ORZO

Avgolemono Soup with Chicken and Orzo

Avgolemono (Greek: Αυγολέμονο) is a Greek soup made with egg and lemon juice mixed with broth, heated until they thicken but before they boil and curdle. Avgolémono translates to "egg-lemon," in English. It is also part of certain stew-like dishes such as the Greek pork with celery and the Turkish yuvarlak, added just before serving to thicken the cooking juices. In other Middle Eastern cuisines, it is used as a sauce for chicken or fish.
As a soup, it usually starts with chicken broth (though meat, fish, or vegetable broths may sometimes be used). Typically, rice or soup pasta, such as orzo, are cooked in the broth with thin strips of meat (chicken, for example) before a mixture of eggs and lemon is added. Its consistency varies from near-stew to near-broth. It is important to remove the mixture from the heat before adding the egg-lemon mix, in order to avoid curdling. The safest way to prevent curdling is to remove a cup of broth from the pot and let cool a little, then gradually add the egg and lemon juice while beating the mixture vigorously with a fork or whisk; once the broth is frothy, it is gently added back to the pot and the soup is served immediately. Leftover soup will invariably curdle, even if refrigerated or rewarmed. Its taste will not change but the texture and mouthfeel cannot be recovered.
The soup is usually made with whole eggs; sometimes with just yolks.[1] The whites typically are beaten first until soft peaks form and then the yolks and lemon juice are beaten into the whites until just combined. Whole eggs may also be beaten together without the initial separation. Starch may be added to the soup as an additional thickener, however, it is most often used if one omits the egg whites from the recipe, as the volume from the whipped whites creates thickness.

Cooking time: 20 minutes

Ingredients:

salt and pepper
2 tbsp flat leaf parsley, for serving, minced
1/2 cup orzo pasta
1-2/3 quarts chicken broth
1/2 lb cooked chicken, diced
1/3 cup lemon juice, plus more, if desired
2 eggs
1 egg yolk 

Cooking Directions:

In a medium saucepot over high heat, bring the chicken broth to boiling. 
Stir in the orzo, reduce the heat to medium-low, and simmer until al dente, about 12 minutes. 
Reduce the heat to low. 
In a large bowl, beat the eggs and egg yolk with the lemon juice until light and frothy. 
Beating constantly, slowly pour 1 cup of the hot stock into the egg mixture. 
Continue to add stock until the eggs are warmed. 
Pour the eggs back into the soup. 
Add more lemon juice if needed. 
Season with salt and pepper. 
Stir in chicken and heat until warmed through, about 5 minutes. 
Do not let the soup simmer. 
Suggestion: Serve with Caesar salad. To serve, ladle into serving bowls and sprinkle with parsley.

Ingredients:

2 tbsp lemon juice
1 tbsp unsalted butter
1 lb broccoli florets 

Cooking Directions:

Place broccoli in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until broccoli is bright green and tender. Remove from steamer basket. Add remaining ingredients and pepper to taste.

GRILLED SWEET POTATOES

Grilled Sweet Potatoes 

Preparation time: 5 min Servings: 4
Cooking time: 45 min

Ingredients:

1-1/3 tbsp brown sugar
2 large sweet potatoes, scrubbed and cut in half lengthwise
4 sheets heavy duty aluminum foil
1-1/3 tbsp unsalted butter 
 

Cooking Directions:

Prepare grill. Arrange sweet potato halves cut side up on individual sheets of aluminum foil. Sprinkle with salt and pepper to taste, dot with butter and sprinkle with brown sugar. Wrap tightly. Grill 45 minutes, turning frequently until potatoes are tender.

SWEET & SOUR PORK

Sweet and Sour Pork Chops
Tender pork chops featuring a perfect twist of tang.

Preparation Time: 5 minutes
Cooking Time: 45 minutes


Ingredients
Directions 1 In a medium skillet over medium-high heat, brown pork chops, turning once.
2 Combine soy sauce, vinegar, and Splenda and pour over meat.
3 Separate onion into rings and add to skillet.
4 Cover skillet and cook on low heat for about 40 to 45 minutes or until meat is tender. Check occasionally making sure heat isn't too high. You want some of those tasty juices to remain in the pan.
5 When cooked through, remove from heat and serve.

STEAMED ZUCCHINI W/ BUTTER

Ingredients:

2 tsp unsalted butter
1/4 tsp pepper, to taste
1-1/4 lb zucchini, cut in .25 in. slices

Cooking Directions:

Place zucchini in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until zucchini is bright green and tender. Drain. Add butter and pepper to taste.

MACARONI & CHEESE W/ SMOKED HAM

Macaroni and Cheese with Smoked Ham

Cooking Time: 15 minutes

Ingredients:

1-1/2 tsp dry mustard
2 cups smoked ham, diced
1 lb packaged macaroni and cheese
1/4 cup scallions, chopped
1 cup lowfat milk
2 tbsp unsalted butter
1/4 tsp pepper

Cooking Directions:

Set aside cheese packet. Cook macaroni in a large pan of boiling water 8-10 minutes, or until just cooked through. Drain and keep warm. Melt butter in a heavy nonstick pan over medium high heat. Cook ham about 4 minutes, stirring frequently, until browned. Stir in milk, dry mustard and reserved cheese packet. Bring to a boil over high heat, whisking constantly, until smooth. Remove from heat and stir in macaroni, scallions and pepper.

MAPLE - MUSTARD GLAZED BAKED HAM

Maple-Mustard Glazed Baked Ham

Ingredients:
  • 1 (6-pound) fully cooked ham
  • 8 whole cloves
  • 1/3 cup sugar-free pancake syrup
  • 3 tablespoons Dijon mustard
Directions:
1. Heat oven to 325°F.  
2. With a sharp knife, lightly score surface of ham in a diamond pattern; insert cloves. Place ham on a rack in a shallow roasting pan.  
3. In a small bowl mix syrup and mustard until blended. Brush mixture over ham. 
Bake 1½-2 hours, basting occasionally with glaze, until a meat thermometer registers 140°F.

RICE SALAD W/ NUTS & OLIVES

Rice Salad with Nuts and Olives

Preparation time: 5 min Servings: 4
Cooking time: 15 min

Ingredients:

2/3 cup chicken stock
1 scallion, trimmed and minced
1 tbsp lemon juice
2 tbsp grated Parmesan cheese
2 tsp olive oil
1/2 tsp mint, or 1 Tbsp fresh, chopped
2/3 cup water
2 tbsp Kalamata olives, or other olives
2 tbsp pine nuts, or chopped almonds
2/3 cup long-grain white rice

Cooking Directions:

Preheat oven to 350°F. Combine stock and water in a saucepan and bring to a boil over high heat. Stir in rice and return to a boil. Immediately reduce heat to low. Cover saucepan and simmer 15-20 minutes or until rice is tender and liquid is absorbed. Remove from heat and let stand 5 minutes covered. Place pine nuts in a shallow pan and toast in oven 3-5 minutes, or until golden. Shake pan at 3 minute intervals. Transfer to a dish to cool. Transfer cooked rice to a bowl and fluff with a fork. Stir in oil. Add remaining ingredients, pine nuts and pepper to taste and toss.

1 tbsp unsalted butter, melted
2 lb spinach, stemmed, washed
2 tsp balsamic vinegar, or white wine vinegar
1/4 tsp salt to taste (optional)

Cooking Directions:

Place spinach with water that clings to it in a large heavy saucepan over medium high heat. Season with salt and pepper to taste. Cover and cook spinach 3-5 minutes or until leaves begin to wilt. Remove from heat and drain thoroughly. Add butter and vinegar before serving.

Gnocchi (English pronunciation: /ˈnɒki/, /ˈnjɒki/; Italian: [ˈɲɔkki], singular gnocco) are various thick, soft dumplings. They may be made from semolina, ordinary wheat flour, potato, bread crumbs, or similar ingredients. The smaller forms are called gnocchetti.
Gnocchi are eaten as entrées (primi piatti), alternatives to soups (minestre), or pasta. They are widely available dried, frozen, or fresh in vacuum sealed packages in supermarkets and specialty stores. Classic accompaniments of gnocchi include tomato sauces, pesto, and melted butter (sometimes fried butter) with cheese.
While they are often available frozen in specialty grocers, they are typically homemade in Italian and Italian-American households.

Ingredients:

1-3/4 oz Parmesan cheese, or Romano cheese, grated
2 oz cheddar cheese, grated
1 lb fresh gnocchi
1/4 lb blue cheese
1-1/4 cups cream

Cooking Directions:

Bring 4 liter of water to a boil in a large pot; add gnocchi, and cook for 4-6 minutes. Drain well, set aside. Place cream, blue cheese, and cheddar cheese in a saucepan; cook over a low heat until cheese has melted. Add gnocchi and stir. Top with Parmesan or Romano cheese.

HERBED TORELLINI

Ingredients:

2/3 cup grated Parmesan cheese, or Romano cheese
1/2 tsp black pepper, cracked
1-1/3 tbsp parsley, chopped
1 lb cheese tortellini, or other tortellini
3-1/4 oz unsalted butter
2 tsp dried oregano

Cooking Directions:

Cook pasta in boiling salted water 8-10 minutes, or until al dente. Drain. Melt butter in a heavy nonstick pan over medium high heat. Add pasta, herbs, peppercorns, and half the cheese. Stir until heated through. Serve sprinkled with remaining cheese

1/2 tsp canola oil
4 lemon wedges
4 salmon steaks, rinsed and patted dry

Cooking Directions:

Preheat grill machine. Brush oil over both grilling surfaces. Arrange salmon on hot grill, in batches if necessary. Close cover and cook about 5 minutes, or until fish is cooked thoroughly and flakes easily. Serve with lemon wedges.

SPINACH W/SUN DRIED TOMATOES

Spinach with Sun Dried Tomatoes

Ingredients:

2 tbsp slivered almonds
2 tbsp grated Parmesan cheese
1-1/2 lb spinach, washed and tough stems discarded
1-1/3 tbsp unsalted butteror margarine
2 tbsp sun dried tomatoes, chopped
2 cloves garlic, crushed
1/8 tsp salt (optional)

Cooking Directions:

Melt butter in a heavy nonstick skillet over medium heat. Sauté garlic 1 minute. Add spinach, tomatoes, and almonds. Increase heat to medium high. Cover and simmer 4-5 minutes, stirring occasionally, until spinach is wilted. Season with salt and pepper to taste. Sprinkle with Parmesan before serving.

1 lb firm tofu, cut into .5 in. slices
1/4 cup mirin, or sweet rice wine
1 tbsp ginger, grated
2 tsp peanut oil, or other oil

Cooking Directions:

Heat oil in a heavy nonstick skillet over medium high heat. Sauté tofu 2 minutes per side, or until golden. Stir in remaining ingredients, cover pan and simmer another 2 minutes. Serve tofu with sauce

CHEESE CREPES WITH HAM

Cheese Crepes with Ham

Turning eggs into thin crepes is the secret to this dish, stuffed with ham and cheese.

Prep Time: 5 minutes
Cook Time: 5 minutes
Difficulty: EASY

Ingredients
4 eggs
1
pinch black pepper , freshly ground

olive oil cooking spray

oz sliced ham lunchmeat, extra lean , cut into 1-inch strips

oz shredded mozzarella cheese
1
medium tomatoes , sliced

Directions 
1 Preheat broiler.

Mix eggs with pepper to taste.

Heat a medium nonstick frying pan on medium heat, spray with olive oil spray and pour half the egg mixture into the pan.

Spread to make a thin layer and leave to cook for 2 minutes. Turn over for 1 minute. Remove from heat to a foil lined baking tray.

Repeat with second half of egg mixture.

Sprinkle ham and cheese over crepes. Fold over once and place under broiler about 10 inches from heat. Broil for 2 minutes or until cheese melts.

Carefully slide on to a plate, place sliced tomatoes on the side, and serve.

1-1/2 lb spinach, rinsed and tough stems discarded
1/8 tsp salt (optional)
2 tsp lemon juice
1 tsp sesame seeds

Cooking Directions:

Toast sesame seeds in a heavy nonstick skillet over medium heat, about 3 minutes, shaking pan constantly until seeds are browned and have popped. Add spinach, salt and pepper to taste. Cover skillet and cook 2 minutes or until spinach begins to wilt. Remove from heat. Stir in lemon juice before serving.

2 tbsp fresh lemon thyme, chopped
2 tbsp chives, chopped

Cooking Directions:

Heat a heavy nonstick skillet over medium high heat. Cook bacon 5-6 minutes until browned. Stir in peas and cook 4-5 minutes, stirring occasionally until peas are tender. Stir in chives and lemon thyme. Serve hot.
