TURKEY & BLACK BEAN SLOPPY JOES

Turkey and Black Bean Sloppy Joes
Low fat, high taste sloppy joes

INGREDIENTS
19 ounces turkey (93% lean)
black beans 1 can - drained and rinsed
one medium onion sliced
1 tsp minced garlic
1 can - 6oz tomato paste
12 oz low sodium tomato juice
1 tbsp olive oil
1 tsp paprika
2 tsp chili powder
1 can tomatoes and green chiles
0.25 tsp salt
1 tsp Onion & Herb Ms Dash


DIRECTIONS
Brown ground turkey and drain fat. Combine remaining ingredients and heat till hot and desired thickness. Server on whole wheat hamburger buns or whole wheat bread. (bun/bread in not in calorie count).

TURKEY, ARTICHOKE & TOMATO TAPAS

Tapas (Spanish pronunciation: [ˈtapas]) is the name of a wide variety of appetizers, or snacks, in Spanish cuisine. They may be cold (such as mixed olives and cheese) or warm (such as chopitos, which are battered, fried baby squid). In select bars in Spain, as well as some parts of North America and the United Kingdom, tapas has evolved into an entire, and sometimes sophisticated, cuisine. In Spain, patrons of tapas can order many different tapas and combine them to make a full meal. In some Central American countries such snacks are known as bocas.
The serving of tapas is designed to encourage conversation because people are not so focused upon eating an entire meal that is set before them. Also, in some countries it is customary for diners to stand and move about while eating tapas.



1 lb turkey tenderloins cut into 3/4-inch medallions
2 tsp olive oil
1 Jar (6 ounces) marinated artichoke hearts drained, halved; juice reserved
1 to 2 Tablespoons balsamic vinegar
1/4 tsp dried oregano
1/8-1/4 tsp red pepper flakes
1 Large clove garlic minced
6 to 8 Cherry tomatoes halved


1 In large non-stick skillet, over medium heat, saute turkey in oil 4 minutes per side or until turkey is golden brown and no longer pink in center and meat thermometer, inserted in thickest portion of tenderloin reaches 170 degrees F.
2 In medium bowl combine artichoke juice, vinegar, oregano, pepper flakes and garlic. Fold turkey and artichokes into mixture. Cover and refrigerate overnight.
3 Before serving, fold in tomatoes.

TURKEY TETRAZZINI

Turkey Tetrazzini

Tetrazzini is an American dish usually involving a non-red meat (often diced fowl or seafood), mushrooms, and almonds in a butter/cream and parmesan sauce flavored with wine or sherry and stock vegetables such as onions, celery, and carrots. It is often served hot over spaghetti or some similarly thin pasta, garnished with lemon or parsley, and topped with additional almonds and/or Parmesan cheese.
The dish is named after the Italian opera star, Luisa Tetrazzini. It is widely believed to have been invented ca. 1908-1910 by Ernest Arbogast, then chef at the Palace Hotel in San Francisco, California, where Tetrazzini was a long-time resident. However, other sources attribute the origin to the Knickerbocker Hotel in New York City.
There is no universal standard for the dish, so various parts are missing or substituted in various recipes. For example, another kind of nut, or different hard cheese. The name is often expanded to describe the specific meat used (e.g. Chicken Tetrazzini, or Tuna Tetrazzini).

Ingredients

  • 1 tablespoon margarine, low-calorie
  • 2 cup(s) mushrooms, sliced
  • 2 tablespoon flour, all-purpose
  • 1 teaspoon paprika
  • 2 cup(s) milk, fat-free evaporated
  • 1/4 cup(s) cheese, Swiss, low-fat, grated
  • 1/2 cup(s) scallion(s) (green onions), sliced
  • 1/4 cup(s) pepper(s), red, bell, diced
  • 1/2 cup(s) turkey, cooked, diced
  • 1 pounds pasta, spaghetti, cooked
  • 1 tablespoon cheese, grated Parmesan

Preparation

1. Preheat the oven to 350 degrees F. Melt the margarine in a heavy skillet over medium-high heat. Add the mushrooms and saute for 5 minutes. Sprinkle the flour and paprika over the mushrooms. Add the milk and stir until thickened.
2. Add the remaining ingredients except the Parmesan cheese. Pour the mixture into a 2-quart casserole dish. Sprinkle with the Parmesan cheese. Bake for 15 minutes until bubbly.

MACADAMIA TURKEY SALAD ON CUCUMBER SLICES

Ingredients

  • 1/2 cup(s) turkey, cooked, finely chopped
  • 1/2 small apple(s), chopped
  • 2 tablespoon dressing, low-fat mayonnaise-based
  • 1 tablespoon chutney
  • 1 tablespoon chives
  • 1/2 teaspoon ginger, fresh
  • 1/4 cup(s) nuts, macadamia
  • 24 slice(s) cucumber(s)

Preparation

1. In a small bowl, combine turkey, apple, mayonnaise dressing, chutney, chives or green onion, and ginger. Cover and chill for 2 hours. Just before serving, stir in half of the nuts.

2. To serve, spoon a scant tablespoon of the turkey mixture onto each cucumber slice. Sprinkle with remaining nuts.

GREEK TURKY BURGER

Greek Turkey Burger

You'll forget all about beef burgers once you try these. Serve with half a pita pocket, sliced tomato, and mixed greens for a quick and tasty dinner. Salty and rich feta is mixed with lean ground turkey and Greek herbs for a juicy and delicious burgers.
INGREDIENTS
1 lb. 93% lean ground turkey
1/4 c bread crumbs, plain
1/2 c feta cheese, crumbled
1 egg white
1 T mint, fresh, chopped
1 t oregano, dried
1/4 t black pepper
Cooking spray
DIRECTIONS
Mix all ingredients until just combined. Overworking the mixture can result in tough burgers. Heat a non-stick skillet to medium low heat. Divide the meat mixture into 4 round balls. Flatten the burgers with your hand and press your thumb in the center of each burger to keep the meat from rising too high as it cooks. Spray skillet. Cook the burgers about 5-6 minutes per side, flipping only once, until internal temperature reaches 165 degrees.

SLOPPY JOE

Ingredients

2-3/4 lbs Extra Lean Ground beef or ground Turkey, browned, drained, and patted dry
1 onion, finely chopped
1 green pepper, finely chopped
2-8 oz can tomato sauce, no salted added
3/4 c ketcup, no salted added
1 tbsp worcestershire sauce
1 tsp chili powder
1/4 tsp pepper
1/4 tsp garlic powder

Cooking Instructions

Combine all ingredients in slow cooker
Cover; cook on low for 8-10hrs or on high for 3-4 hrs
Serve on Sandwich rolls
Enjoy!
