SPINACH DIP
Spinach Dip
Ingredients:
1 package frozen chopped spinach - (10 oz) defrosted
2 tablespoon red wine vinegar
3 garlic cloves minced
1 tablespoon minced fresh mint
1 cup low-fat sour cream or non-fat yogurt excess liquid
drained
Directions:
Drain excess water from the spinach by placing it in a sieve and using the back of a spoon to press out all the water.
Combine the remaining ingredients in a small bowl. Mix well. Add the spinach and mix well. Serve with an assortment of raw or lightly cooked vegetables, whole-grain crackers, breadsticks, or pita wedges.
12 servings. Serving size: 2 tablespoons.

SPINACH DIP
SPINACH DIP
2 cups low-fat cottage cheese
1 10-ounce package frozen chopped spinach, thawed and drained
1 1-ounce envelope dip seasoning mix
2 tablespoons reduced-calorie sour cream
1 clove garlic, minced
1/8 teaspoon hot pepper sauce
rice cakes or rice crackers
Combine cottage cheese, spinach, seasoning, sour cream, garlic and pepper sauce in blender; process until smooth.
Chill.
Serve with rice cakes or rice crackers.

GREEN EGGS & HAM
GREEN EGGS AND HAM
Popeye would approve of the way this is made. Dr. Seuss's favorite dish, using spinach and other fresh greens.
Makes 2 servings
2 large eggs + 2 large egg whites
1/2 teaspoon salt
Freshly ground black pepper
1 cup chopped fresh spinach, or frozen chopped spinach, defrosted and squeezed dry
1/3 cup chopped flat-leaf parsley
3 scallions, green part only, chopped
1/2 cup chopped low-fat ham
1. Combine the eggs and whites in a mixing bowl. Add the salt and 2 or 3 grinds of black pepper. Whisk until well combined.
2. Coat a medium nonstick skillet with cooking spray and heat it over medium-high heat. Add the spinach, pulling the frozen spinach apart, if using. Mix in the parsley, scallions, and ham. Cook the greens, stirring with a wooden spoon, until they are wilted, 2 minutes. Pour in the beaten eggs and stir constantly until they are combined with the other ingredients and scrambled, about 2 minutes. Divide the cooked eggs between 2 plates and serve immediately.

BAKED SPINACH & EGG
Baked Spinach and Egg
Ingredients
• cooking spray (olive oil)• 180 g spinach (English leaves stems removed)
• 1 tablespoon olive oil spread (light)
• 2 1/2 tablespoons plain flour
• 2 cups skim milk
• 1/2 cup cheese (grated fat-reduced tasty or cheddar)
• 1/4 teaspoon ground nutmeg
• 6 eggs (room temperature)
• 4 spring onions (finely chopped)
Cooking Instructions
Prep Time: 10 minsTotal Time: 40 mins
1. 1 Preheat oven to 180C (160C fan forced).
2. 2 Lightly spray f x 1 cup capacity oven proof dishes with oil.
3. 3 Place spinach and 1 tablespoon water in a medium saucepan over moderate heat and cook and stir for 3 minutes or until wilted and then drain and cool.
4. 4 Using hands, squeeze excess liquid from spinach and chop coarsely.
5. 5 Melt spread in a small saucepan over moderate heat and add flour and cook and stir for 1 minute or until bubbling and remove from heat and gradually stir in milk and increase heat to moderately high and cook stirring constantly until mix boils and thickens slightly and then remove from heat and stir in cheese and nutmeg until smooth.
6. 6 Whisk in 2 of the eggs until well combined and then add spinach and onion to cheese sauce.
7. 7 Pour mix into prepared dishes and using the back of a spoon make a slight indent at the centre of each dish and break an egg into each indent.
8. 8 Place ramekins on a baking tray and bake for 18 to 20 minutes or until eggs are just set and then stand for 5 minutes before serving with toast

TEX-MEX SPINACH OMELET
Tex-Mex Spinach Omelet Recipe

Ingredients
- 1 cup(s) refrigerated or frozen egg product, thawed, or 4 eggs

- dash(es) cumin, ground
- cooking spray

Preparation

1. In a medium bowl, combine egg product or eggs, cilantro, salt, and cumin. Beat with a whisk or rotary beater until frothy.

Using the spatula, lift and fold an edge of the omelet partially over filling. Top with remaining spinach and the remaining relish. Cut omelet in half; transfer omelet to warm plates.

1 cup part skim ricotta or cottage cheese
1 cup milk
1 teaspoon salt
freshly ground black pepper
1/4 teaspoon freshly grated nutmeg - do not skip this ingredient - trust me
6 large eggs
4 ounces Cabot Cheddar cheese - shredded by hand on a box grater
One package Green Giant Chopped Spinach, thawed and squeezed dry
10 large sundried tomatoes halves - dicedPreheat oven to 350°F and spray a 9-inch pie plate with nonstick cooking spray.

1. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add olives. Cook for 3 minutes, stirring occasionally. Remove olives from skillet; set aside. Increase heat to medium-high. Add spinach and/or mustard greens to skillet, adding gradually if necessary. APPLE SPINACH SALAD W/ THYME-DIJON VINAIGRETTE DRESSING
Ingredients
4 cup(s) spinach, baby1 medium apple(s), Granny Smith, cored and sliced
1/4 cup(s) onion(s), red, thin wedges
2 tablespoon cherries, dried, snipped
1/2 cup(s) cheese, feta, crumbled, (optional)
1/4 cup(s) oil, olive
1/4 cup(s) vinegar, balsamic
2 teaspoon thyme, fresh
1 teaspoon mustard, dijon-style
1/4 teaspoon salt
Cooking Instructions

BABY SPINACH SALAD W/ STRAWBERRIES & TOASTED ALMONDS
Baby Spinach Salad with Strawberries and Toasted Almonds
Fresh and juicy during spring and summer months, strawberries are delicious when combined with tender spinach and crunchy toasted almonds.
INGREDIENTS
1/3 c almonds, slivered
4 c baby spinach
3/4 c strawberries, quartered
1 T balsamic vinegar
1 t Dijon mustard
1 t honey
3 T extra virgin olive oil
Salt and pepper to taste
DIRECTIONS
Place the almonds in a dry skillet or saute pan. Cook over low heat, shaking the pan the entire time until the almonds are toasting. Almonds are done when you start to smell a "nutty" scent.
Remove almonds from the pan to cool. (Do not cool in the skillet because they will burn from the heat that remains in the pan.) Wash and dry the spinach.
Prepare the dressing by placing the vinegar, mustard, and honey in a mixing bowl. Slowly whisk in the oil until all is incorporated. Place spinach in a large bowl. Add strawberries, almonds, and dressing. Toss to coat. If desired, season with a pinch of salt and pepper.

1/4 to 1/2 tsp. crushed red pepper flakes
2 roasted red bell peppers (homemade or jarred), chopped (about 1 cup)
2 large cloves garlic, thinly sliced
1 small tomato, cored and chopped
1 Tbs. red wine vinegar
2 large shallots, thinly sliced
2 bunches spinach (about 1-3/4 lb. total), stemmed and roughly chopped
1/3 cup pitted green olives, roughly chopped
1 Tbs. fresh lemon juice
1 Tbs. fresh orange juice
Season the rib-eye cutlets all over with 2 tsp. salt and 1 tsp. pepper. Heat a large, well-seasoned cast-iron skillet over medium-high heat for 2 to 3 minutes. Add 1 Tbs. of the oil, arrange two of the cutlets in the skillet, and cook, flipping once, until seared and golden-brown on both sides, about 2 minutes total. Transfer to a large plate and keep warm. Repeat with the remaining four cutlets, adding an additional 1 Tbs. oil before the last batch.
Reduce the heat to medium low. Add the breadcrumbs, almonds, and pepper flakes to the skillet and cook, stirring constantly and scraping up any browned bits, until the mixture is fragrant and toasted, about 2 minutes. Add the peppers, garlic, tomato, 1/2 tsp. salt, and 1/8 tsp. pepper and cook, stirring often, until softened and juicy and the flavors have melded, 3 to 4 minutes.
Transfer the mixture to a food processor. Add the vinegar and 2 Tbs. warm water and purée until smooth. With the motor running, drizzle in 2 Tbs. of the oil. Transfer the sauce to a bowl, season to taste with salt and pepper, and keep warm.
Heat the remaining 1 Tbs. oil in the skillet over medium heat. Add the shallots and cook, stirring often, until just softened, 2 to 3 minutes. Add the spinach, cover, and cook for 1 minute. Uncover and continue to cook, tossing often, until just wilted, about 2 minutes more. Remove from the heat and toss in the olives, lemon juice, orange juice, 3/4 tsp. salt, and 1/8 tsp. pepper.
Spoon the romesco sauce onto 6 plates, top with the cutlets and wilted spinach, and serve.

SPINACH ARTICHOCKE DIP
Spinach Artichoke Dip

Ingredients:
1/4 tsp curry powder, optional
1 cup grated Parmesan cheese
1 package (10 oz) frozen chopped spinach, thawed and drained
1 tsp lemon juice
1/4 cup onions, chopped
1/4 tsp Worcestershire sauce
14 oz canned artichoke hearts, drained and chopped
1 tbsp unsalted butter
1 clove garlic, crushed
Cooking Directions:
Preheat oven to 350°F. Melt butter in a heavy nonstick skillet over medium high heat. Sauté onion 3-4 minutes until softened. Press out excess moisture from drained spinach. 2 tsp lemon juice
1 tsp sesame seeds
