BACON-WRAPPED CHICKEN

Low Carb Bacon-Wrapped Chicken



Ingredients:
(with El Pollo Loco-style marinade)
Marinade:
1/4 cup Corn Oil
1/4 cup Onion
1/4 cup Butter
2 tbsp Minced Garlic
1/4 tsp Cumin
1 tsp Oregano
1/4 cup Lemon Juice
1 tsp Orange Extract

4 Large Chicken Breasts, slicked into 1" cubes
12 slices Bacon
4 oz of Cream Cheese
2 tbsp green chiles
1 tsp minced garlic
Makes 6 servings

TERIYAKI WINGS



Ingredients:
3 pounds of Wings
1 can Diet Cola with Splenda
1/3 cup Soy Sauce
1 TBS Butter
1 TBS Splenda
1 TBS Frank's Hot Sauce or any Red Pepper hot sauce
1 tsp Garlic Powder
1 1/2 tsp Ground Ginger
1/2 to 1 tsp Xanthan Gum
Makes 10+ Servings

CHEESECAKE SQUARES



Crust:
2/3 cup Almond flour
1/3 cup Flax meal
¼ cup vanilla whey protein
2 TBS Splenda
1/3 cup butter, melted
This is very similar to the recipe I make called "faux" Graham cracker crust except with the added Vanilla Powder and without a pinch of added salt. I am not sure if I needed the vanilla powder or not. Not having enough raw almonds in the house really affected my options, and I think I like the addition of the salt.

12 oz Neufchatel cream cheese, softened
1 egg
½ cup sour cream
½ cup SPLENDA® Granular
2 tbsp unsalted butter
1 tsp vanilla extract
1 cup canned fruit cocktail in juice or water, drained
I bumped up the cream cheese a bit more to make the bars a bit bigger and a bit more like cheesecake. I estimate that I could get 18 small pieces from my recipe or more likely 12-15 servings. 

That makes my recipe at 15 servings:
188 Calories, 17g Fat, 7g Carbs, 1.5g Fiber, 5.7g Protein

3 MINUTE CHOCOLATE CAKE


Low Carb Chocolate Cake (courtesy of Linda's Low Carb Site)
1 TBS Butter, microwave for 10 seconds to soften
1 Egg
1 TBS Da Vinci SF Vanilla syrup
2 TBS Splenda
1 TBS heavy cream
Pinch salt
2 TBS cocoa

Mix together all the ingredients until it is as smooth as possible. It should look similar to cake batter at this point. Microwave for 1 minute. For the special treat, add 1 TBS of whipped heavy cream (sweetened with Splenda).

Makes 1 serving

With granular Splenda:
Per Serving: 267 Calories; 23g Fat; 9g Protein; 11g Carbohydrate; 4g Dietary Fiber; 7g Net Carbs

CHOCOLATE BARK/ CHOCOLATE COVERED PEANUTS



The only difficult thing is finding the Coconut Oil -- Super Wal-mart sells a good brand for day to day cooking needs. The Recipe is:
1/4 cup of Coconut Oil
1 packet of Truvia or Artifical Sweetener (liquid Splenda is fine) - **update from recording
1.5 TBS Cocoa Powder
1 oz Peanuts (optional)

Mix together, and spread into lined loaf pan. Freeze for 5-10 minutes or until ready to eat. 

Makes 4 servings.

Info with Liquid Splenda:
Calories- 178, Fat- 18g, Carbs- 3 (1g Fiber), Protein- 2g
**Truvia Net Carbs would be higher due to the Erythitol

PANCAKE MIX



* 8oz pkg cream cheese
* 3 eggs
* 3 tsp Splenda or equivalent liquid Splenda
* 1/4 cup Atkins Bake Mix *recipe below
* 1/2 tsp baking powder
* 1/2 tsp vanilla
* 1/4 cup Heavy Cream or buttermilk

Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes.

WHITE PIZZA SAUCE



Ingredients:
-Crust-
4oz Cream Cheese, Softened 4 eggs
1/3rd cup Heavy Cream 1/2 tsp Oregano
1 tsp Garlic 4 oz Mozzarella Cheese


-Sauce-
1/2 cup Ricotta Cheese 2 TBS Olive Oil
2 TBS Heavy Cream 1 Egg Yolk
2 tsp Garlic, Minced 1/4 tsp Salt
Dash, Black Pepper Dash Cayenne Pepper
1 tsp Oregano 1/2 tsp Thyme


-Topping-
1 Chicken Breast 1 cup Broccoli
2 Oz Mozzarella Cheese


Makes 8 single slice servings
