TOMATO COCKTAIL (Hot or Cold)

TOMATO COCKTAIL, HOT OR COLD


Serves 12
1 can (46 ounces) tomato juice cocktail
3 cups beef broth
1 tablespoon prepared horseradish
Snipped chives, if desired
Cooking Directions
Heat all ingredients except chives in medium-sized saucepan over low heat until hot.
To serve, pour into mugs and sprinkle with chives.
Option: Stir all ingredients together except chives, chill until serving and serve sprinkled with chives.
Serving Suggestions
Have this drink either hot or cold.
It goes well for any brunch buffet.

Makes 20 (1/2 cup) servings
(Ideal slow cooker size: 4-quart)

2 qts. apple cider or apple juice
1 pt. cranberry juice cocktail
1/4 cup sugar
2 cinnamon sticks
1 tsp. whole allspice
1 orange, studded with whole cloves
sweetener to equal 2 Tbsp.

1. Put all ingredients in slow cooker.
2. Cover. Cook on High 1 hour, then on Low 4-8 hours. Serve warm.
3. Serve with finger foods.

MELON COOLER

Melon Cooler


Total Time: 15 mins

Ingredients

  • 2 cup(s) watermelon, seedless, chopped
  • 1 tablespoon lime juice
  • ice cubes
  • melon or lime wedges

Preparation

1. In a food processor or blender, combine melon cubes and lime juice. Cover and process or blend until smooth. Press mixture through a fine-mesh sieve; discard pulp. (You should have about 1 cup juice.) Serve over ice or chill mixture and serve in chilled martini or wine glasses. If desired, garnish with melon or lime wedges.

MOCK SANGRIA

Mock Sangria


Total Time: 15 mins

Ingredients

  • 2 cup(s) orange juice
  • 1 cup(s) grape juice, white, unsweetened
  • 1 cup(s) cranberry juice, low-calorie
  • 1 liter(s) lemon-lime soda, diet
  • ice cubes
  • 2 cup(s) assorted fresh fruit (such as oranges, cut into wedges; thinly sliced and halved lemons and/or limes; pineapple wedges; seedless red or green grapes; sliced, peeled and pitted peaches; and halved strawberries)
  • sprig(s) mint, fresh 
  • *add your favorite vanilla, or unflavored protein powder to bump the protein value up, adjust nutritional values accordingly.

Preparation

1. In a large bowl or pitcher, stir together chilled orange juice, white grape juice, and cranberry juice.

2. Add the lemon-lime beverage; stir gently. Fill each of 10 glasses about two-thirds full with ice. Divide fruit among glasses. Pour juice mixture into glasses. Garnish with fresh mint sprigs.

Nonnutritive sweetner to taste

Cantaloupe Aqua Fresca

Ingredients

1/2 cantaloupe, peeled, seeded, and cubed
4 cups water - divided use
1/3 cup SPLENDA® No Calorie Sweetener, Granulated
2 tablespoons fresh lime juice
Optional garnishes: cantaloupe wedges, lime slices

Cooking Instructions

Process cantaloupe and 1 cup water in a blender just long enough to make a coarse pulp; pour into a large pitcher.
Add remaining 3 cups water, SPLENDA® Granulated Sweetener, and lime juice, stirring until sweetener dissolves.

Serve over crushed ice.
Garnish, if desired.

Ingredients

2 cups fresh blackberries, or unsweetened frozen blackberries, thawed
1 cup fresh lemon juice
1 cup Sugar Substitute- Granulated
4 cups cold water

Cooking Instructions

Combine blackberries, lemon juice, and Sugar SubstituteGranulated Sweetener in a blender; process until smooth, stopping to scrape down sides.
Press mixture through a sieve into a pitcher; discard solids. Stir in water. Serve over ice.
Makes 7 (6-ounce) servings.

EGG NOG

Ingredients

1 cup egg substitute
1/2 cup Equal® Spoonful*
1 1/2 teaspoons rum extract
1 1/2 teaspoons vanilla extract
1 quart 2% milk
1 cup frozen light whipped topping, thawed
Freshly grated nutmeg (optional)

Cooking Instructions

Whisk together egg substitute, Equal and extracts. Stir in milk. Whisk in whipped topping until blended.
Refrigerate, covered, at least 2 hours to allow flavors to blend. Whisk just before serving. Garnish each serving with freshly grated nutmeg, if desired.
