Spinach with Sun Dried Tomatoes

Ingredients:
2 tbsp slivered almonds
2 tbsp grated Parmesan cheese
1-1/2 lb spinach, washed and tough stems discarded
1-1/3 tbsp unsalted butteror margarine
2 tbsp sun dried tomatoes, chopped
2 cloves garlic, crushed
1/8 tsp salt (optional)
Cooking Directions:
Melt butter in a heavy nonstick skillet over medium heat. Sauté garlic 1 minute. Add spinach, tomatoes, and almonds. Increase heat to medium high. Cover and simmer 4-5 minutes, stirring occasionally, until spinach is wilted. Season with salt and pepper to taste. Sprinkle with Parmesan before serving.Nutrition Facts
