Mini breakfast muffins (My Oopsie/One Minute Muffin Combo)
4 oz cream cheese
4 eggs
1/2 tsp baking powder
dash of splenda
2 tsp ginger or cinammon
1/2 cup dehydrated coconut
1/2 cup linseed (golden flax seed)
1/2 cup ground almonds
1/2 cup frozen blueberries (optional)
Separate egg whites from yolks. Whip egg whites and baking powder until stiff. In a separate bowl mix egg yolks with all other ingredients and then fold in egg white mixture.
Pour or scoop into small muffin tins. Bake at 150 celsius (350f?) for 20-25 minutes.
Makes 24 muffins. Each muffin contains around 50 calories and only 1 net carb!
***NOTE- put your favorite protein powder as additional powder and bump up the protein value to this simple recipe...adjust accordingly with nutritional values.
